Zucchini Fritters

Ingredients:
4 medium zucchinis, grated and pressed to remove excess water
2 eggs
1 cup shredded cheese (white cheddar or mozzarella)
1 tablespoon onion powder
1 tablespoon garlic powder
1 cup whole wheat flour
Equipment:
Grater
Clean kitchen towel or cheesecloth (for pressing zucchini)
Large mixing bowl
Spoon or small scoop
Baking sheet
Parchment paper or nonstick spray
Oven and oven mitts
Directions:
Preheat oven to 400°F.
Line a baking sheet with parchment paper or spray with nonstick spray.
Grate the zucchini and use a towel to press out as much water as possible.
In a large bowl, mix zucchini, eggs, cheese, onion powder, garlic powder, and whole wheat flour until combined.
Scoop or shape the mixture into small rounds or ovals and place on the prepared baking sheet.
Bake for 15–20 minutes, or until golden and slightly crispy on the outside.
Serve warm with your favourite dipping sauce like marinara, ranch, or tzatziki!
