Zesty Lime Bean Salad

This zesty lime bean salad is fresh, vibrant, and bursting with flavour! It’s packed with protein-rich beans, crisp veggies, and a tangy lime dressing that brings it all together. Perfect as a side dish, light lunch, or a potluck favourite. We love to serve it with some cubed avocado and corn chips!

Recipe

This recipe will make 6 servings

Ingredients:

  • Salad

    • 1 can (540 mL) black beans

    • 1 can (341 mL) corn, drained

    • 1 orange bell pepper, diced

    • 1 small red onion, diced

    • ¼ cup fresh cilantro, chopped

    • Optional: 1 jalapeño, diced

    Dressing

    • ¼ cup lime juice (about 2 limes)

    • 3 tbsp oil (olive or avocado)

    • 1 small garlic clove, grated

    • ¾ tsp salt

    • Fresh cracked pepper, to taste

    • ½ tsp ground cumin

    To Serve

    • Corn tortilla chips

    • Chopped avocado

Equipment:

  • Cutting board

  • Knife

  • Can opener

  • Colander or strainer

  • Large mixing bowl

  • Small bowl or jar (for dressing)

  • Spoon or whisk

Directions:

  1. Prepare the veggies: Dice the bell pepper and red onion. Chop the cilantro and jalapeño (if using).

  2. Mix the salad: In a large bowl, combine drained beans, corn, bell pepper, onion, cilantro, and optional jalapeño.

  3. Make the dressing: In a small bowl or jar, whisk together lime juice, oil, grated garlic, salt, pepper, and cumin.

  4. Dress the salad: Pour the dressing over the salad and mix well to coat.

  5. Chill: Cover and refrigerate for at least 30 minutes to let the flavours all come together.

  6. Serve: Spoon onto a plate and top with chopped avocado. Enjoy with tortilla chips!
