Strawberry Tabouli Salad

Strawberry Tabouli Salad is a fresh twist on the traditional Middle Eastern dish known as tabbouleh, which typically features parsley, mint, bulgur, and lemon juice. This version adds strawberries for a burst of natural sweetness that complements the herbs and tangy lemon dressing. Tabbouleh originates from the Levant region, particularly Lebanon and Syria, and is often served as part of a mezze—a collection of small dishes shared with family and friends.

Yield: 5 servings

Ingredients:

  • 1/2 cup fine bulgur

  • 1/2 cup water

  • 1 cup strawberries

  • 1 English cucumbers

  • 1 bunch of parsley

  • 1/2 cup fresh mint

  • 1 green onion

  • 2 tbsp olive oil*

  • 2 tbsp lemon juice

  • 1/2 tsp salt

  • Pepper to taste

Equipment:

  • Measuring cups and spoons

  • Cutting board

  • Knife

Directions:

  1. With adult supervision, soak the bulgur in water for 5-7 minutes. Drain well to remove excess water, then set aside.

  2. Cut the tops off of the strawberries. Cut the strawberries in half lengthwise, then cut each half again lengthwise. Then, chop it into cubes. Add to the large bowl.

  3. Cut the cucumbers in half lengthwise and then cut each half again lengthwise. Chop the cucumber into cubes. Then also add to the large bowl.

  4. Finely chop the parsley, mint, and green onion, and add all vegetables to the bowl.

  5. Add bulgur and season with salt and pepper. Mix gently.

  6. Pour the olive oil and lemon juice over top and mix again.

  7. Allow the salad to sit for a few minutes for the dressing to absorb into the bulgur before enjoying it!
