Pad See Ew

This Pad See Ew is a tasty noodle dish filled with tender vegetables, crispy tofu, and a savoury homemade sauce. The soft rice noodles soak up all the delicious flavours, making it a comforting and satisfying meal.

Recipe

This recipe will make 5-6 servings

Ingredients:

  • Rice noodles

  • 1 tbsp oil

  • 1 package extra-firm tofu

  • 1 broccoli head

  • 2 medium carrots, thinly sliced

Sauce:

  • 4 tbsp soy sauce

  • 2 tbsp sugar

  • 1 tbsp water

  • 1 tsp garlic & onion powder

  • Pinch of black pepper

Equipment:

  • Large skillet or wok

  • Medium pot

  • Cutting board & knife

  • Mixing bowl

  • Wooden spoon or spatula

  • Colander/strainer

  • Measuring spoons & cups

Directions:

  1. Bring a pot of water to a boil. Add rice noodles and cook according to package. Drain and set aside.

  2. Cook the tofu: Heat 1 tbsp oil in a large skillet or wok over medium heat.

  3. Add tofu cubes and cook until lightly browned on all sides.

  4. Remove from pan and set aside.

  5. Cook the vegetables: In the same pan, add a small drizzle of oil.

  6. Add broccoli and carrots. Stir-fry for 2–3 mins.

  7. Add about ¼–½ cup water, cover, and let steam for 5–7 minutes until tender.

  8. Make the sauce: In a bowl, whisk together soy sauce, sugar, water, garlic powder, onion powder, and black pepper.

  9. Add cooked noodles and tofu back into the pan with the vegetables.

  10. Pour in the sauce and gently toss everything together.

  11. Cook for another 2–3 minutes until heated through and well coated.

Storage:

  • Store leftover Pad See Ew in an airtight container in the fridge for up to 3-4 days.
