Lemon Cottage Cheese Tea Cookies

Ingredients:
2 1/4 cups whole wheat flour
1 3/4 cups plain Greek yogurt
2 1/2 tsp baking powder
1 1/4 tsp salt
2/3 cup tomato sauce
2 cups shredded cheese
Your favourite toppings (ex: 1 pepper sliced, 5 mushrooms)
Equipment:
Baking sheets
Parchment paper
Food processor or blender OR resealable food-safe bag and rolling pin
Electric mixer OR wooden spoon/whisk
Large mixing bowl
Medium mixing bowl
Measuring cups and spoons

Preheat oven to 375°F. Line baking sheets with parchment paper. Ask an adult to help with the oven and baking sheets.
Process the cottage cheese in a food processor or blender until mostly smooth. No blender? Place the cottage cheese in a sealed food-safe bag and gently roll over it with a rolling pin until mostly smooth. Reserve.
Combine flour and baking powder. Set aside.
Using an electric mixer, beat butter and sugar until light and fluffy (about 3 minutes). Add the egg and beat until incorporated. Add cottage cheese, ½ lemon zest, ½ lemon juice, and vanilla. Beat to combine. No electric mixer? An adult can help you mix by hand using a wooden spoon or whisk.
Stir in dry ingredients until just combined.
Spoon 2 tablespoons of dough for each cookie onto the lined baking sheet. An adult should place the baking sheet in the oven. Bake for 15 minutes, until slightly golden. Remove from oven and let rest on the baking sheet for 20 minutes.
Meanwhile, combine powdered sugar, remaining lemon zest, and remaining lemon juice. Stir until smooth. Spoon about ½ teaspoon onto each cookie and gently spread with a spoon. Let the glaze harden for about 2 hours before serving.
Storage:
• Store in an airtight container in the refrigerator for up to 1 week.
• Freeze for up to 2–3 months. Thaw at room temperature before serving.
