Burrito Bake

This easy one-pan quinoa dish is hearty, colorful, and packed with flavor! Loaded with protein-rich black beans, fluffy quinoa, and vibrant veggies like corn and bell pepper, it makes a balanced and satisfying meal. The spices and a squeeze of fresh lime juice bring everything together for a zesty, southwest-inspired taste.

Yield: 5 Servings

Ingredients:

  • 1 cup quinoa, rinsed

  • 1 cup black beans, use the remaining 3/4 cup for Secret Ingredient Brownies

  • 1 can diced tomatoes

  • 1 cup corn (frozen or canned)

  • 1 bell pepper, diced

  • 1 cup shredded cheese

  • 1 lime, juiced

  • 2 teaspoons chili powder

  • 2 cloves garlic or 1 tsp garlic powder

  • 1 tsp cumin powder

  • 1 tsp salt

  • 1/2 tsp cayenne (optional)

Equipment:

  • 9x9 baking pan

  • 1 Medium pot

  • Spoon

  • Knife

  • Can opener

  • Strainer

  • Cutting board

  • Measuring cups

  • Measuring spoons

  • Oven

  • Oven mitts

Directions:

  1. Pre-heat oven to 350 F.

  2. Coat a 9x9 baking pan with cooking spray or oil.

  3. With adult supervision place quinoa into your pot with 2 cups of water *quinoa is cooked in a 2:1 ration with water. Bring the pot to a boil over high heat. Once it starts to boil turn the temperature down to low and allow it to cook covered for 18 minutes. Turn off the heat and allow the quinoa to rest covered for another 5-10 minutes.

  4. After the quinoa has rested, fluff it with a fork. Then pour into the pot, the black beans, diced tomatoes, corn, peppers, lime juice, spices, and 1/4 cup of the shredded cheese mix until combined.

  5. Pour the mixture into your 9x9 baking dish and top with the remaining shredded cheese.

  6. Bake for 20 minutes, until the cheese is melted and the quinoa is heated through. 

Tip: Quinoa is pronounced 'Keen-wah'

Fun Fact: Technically, quinoa is not a grain, but actually a protein-rich seed that is related to spinach, beets, and swiss chard.
