Packed with protein from Greek yogurt, eggs, and cheese, plus fibre-rich whole wheat flour and veggies, they’ll keep you full and energized all morning. Each biscuit has just 156 calories with 9.6 grams of protein and 3 grams of fiber. Perfect for meal prep—just grab and go!

 Ingredients:

  • 1 + ¾ cups plain 0-2% Greek yogurt

  • 4 large eggs

  • 2 + 3/4 cups whole wheat flour

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 2 teaspoons oregano (optional)

  • 1.5 teaspoons paprika (optional)

  • 1 tablespoon baking powder

  • 1 teaspoon salt

  • 2 cups veggies, chopped very small (like red onion and broccoli)

  • 1 cup shredded cheese, divided (half inside and half on top)

Directions:

  1. Preheat the oven to 375°F.

  2. Line a baking tray with parchment paper or lightly grease it with cooking spray so the biscuits don’t stick.

  3. Mix the Wet Ingredients: In a big bowl, crack the eggs and add the Greek yogurt. Whisk them together until the mixture looks smooth.

  4. Mix the Dry Ingredients: In a different, medium-sized bowl, add the whole wheat flour, garlic powder, onion powder, oregano (if using), paprika (if using), baking powder, and salt. Stir everything together until well mixed.

  5. Combine the Wet and Dry Ingredients: slowly add the dry ingredients to the big bowl with the wet ingredients.

  6. Stir with a spatula or spoon until everything is just combined. The batter will be thick

  7. Stir in the small diced veggies and half of the shredded cheese (½ cup). Mix until they are spread throughout.

  8. Use a ⅓ cup measuring cup to scoop the batter and place it onto the prepared baking tray. Flatten each scoop slightly with your hand or a spoon.

  9. Sprinkle the remaining ½ cup of shredded cheese on top of each biscuit.

  10. Carefully place the baking tray in the oven (ask for help if needed) and bake for 18-22 minutes, or until the biscuits cheese is bubbly and the bottoms are golden brown.

  11. Let the biscuits cool on the tray for a few minutes, then enjoy your cheesy veggie biscuits warm, or let them cool completely!
