Bannock with Blueberries

This bannock with blueberries is a warm and tasty bread that is fun to make with your hands. The bannock cooks in a frying pan until it is golden brown, and the sweet blueberry topping makes it extra delicious. Recipe

This recipe makes 5-6 servings

Ingredients:

  • Bannock

    • 1 cup whole wheat flour

    • 2 ½ tsp baking powder

    • ¼ tsp salt

    • 2 tbsp oil or melted butter

    • ½ cup water

    Wild Blueberries

    • 1 cup frozen wild (or regular) blueberries or berry of choice

    • 1 ½ tbsp brown sugar or white sugar (can also use maple syrup)

Equipment:

  • Medium and small bowl

  • Whisk or fork

  • Measuring cups

  • Measuring spoons

  • Medium or large frying pan

  • Tea towel or plastic wrap

  • Knife

  • Cutting board

  • Saucepan

Directions:

Bannock

  1. In the medium bowl, mix together the flour, baking powder, and salt together using a whisk or fork.

  2. Add the water and 1 tbsp of oil or melted butter to the flour mixture, and using clean hands or a spatula stir together until it forms a dough. If the mixture is too sticky, sprinkle in more flour 1 tbsp at a time until you can make a ball with the dough. (You will most likely need to add more flour).

  3. Let the dough rest for 10-15 minutes in the bowl at room temperature, covering the bowl with a tea towel or plastic wrap.

  4. After the dough has rested, with the help of an adult cut the dough into 5 or 6 equal sized pieces. Use your clean hands to make each piece of dough round like a ball and then use your hands to flatten it to about

  5. With the help of an adult, heat a frying pan on the stovetop at medium heat.

  6. Add the remaining 1 tbsp of oil or melted butter to the pan, and gently drop 2-3 pieces of dough in the pan at a time. Cook for 3-4 minutes per side, or until golden brown.

Blueberries

  1. Combine blueberries (or your choice of berry) and sugar in bowl or saucepan. heat in microwave or on stove until just melted and a syrup has formed.

Serve warm bannock with the blueberry mixture, or enjoy on its own. You can freeze the leftover bannock once cooled.

Storage:

Store leftover bannock in an airtight container at room temperature for up to 2 days, or keep it in the fridge for up to 5 days. You can also freeze the bannock once it has cooled and warm it up before eating. Store the blueberry topping in the fridge in a sealed container for up to 3 days.
