Dreamy Green Dip
Recipe adapted from: chocolate covered katie
Yield: 5 Servings
Ingredients:
1 cup green peas, frozen or canned
1/2 cup white cannellini beans, you can use the remainder to make Banana bean cake
1-2 garlic cloves
1 lemon, juiced
A small handful of mint, about 12 leaves
1/2 tsp onion powder*
1/2 tsp salt*
2 tbsp olive oil*
black pepper to taste
Equipment:
Food processor or Potato Masher
Cutting board
Knife
Measuring spoons
Juicer
Large bowl
Mixing Spoon
*Not included in your bag
Directions:
If using frozen peas, place peas in a container with a thin layer of water, cover and microwave for 1 1/2 minutes or until defrosted.
To make the dip in the food processor: place all of the ingredients into the blender and puree until smooth.
To make the dip by hand: place the peas, beans, lemon juice, onion powder, salt and olive oil into a large bowl and using a potato masher, smash until dip is mainly smooth.
With help from an adult, finely chop the garlic and mint. Add to the pea mixture. Mix until well combined.
Serve Dreamy Green Dip with your favourite veggies and crackers or a slice of your Flatbread Art Work
