In the garden:

  • Microgreens are the seedlings of vegetables and herbs, harvested when the plant has sprouted a few leaves but is still very short in height.

On your plate: 

  • Microgreens have vitamin A, which is good for your eyes.
  • Microgreens also contain vitamin E, which keeps your lungs in good health and may prevent certain cancers.
  • Gently run microgreen sprouts through water to wash, and include in salads or stir-fries.
  • “Nutrient powerhouses”:
    Microgreens have higher levels of nutrients than mature leaves. When comparing the same amounts of microgreens and fully grown plants, microgreens may have more vitamins and minerals.
